Goats Cheese Stuffed Chilli Peppers

Goat's cheese stuffed chilli peppers

Serves: 4 as a starter or makes 12 canapés

Ingredients 150g goat's cheese
1 bunch chives, finely chopped
12 large jalapeno chillies
Vegetable oil, for deep-frying
75g (½ cup) plain flour
1 egg, lightly beaten
1 cup panko breadcrumbs
Salt and pepper, to taste
1 small continental cucumber, peeled into ribbons
1 punnet cherry tomatoes, halved
50g mixed salad leaves
Extra virgin olive oil, to taste
Lemon juice, to taste

Method 1. Combine goat's cheese and chives in a bowl. 2. Make a slit on one side of the chillies, and remove seeds and veins. Stuff chillies with goat's cheese mixture, and set aside. 3. Half-fill a large saucepan or deep fryer with oil to 160 degrees. 4. Meanwhile, place flour, egg and breadcrumbs into 3 separate bowls. Dust chillies with flour, shaking off any excess, then dip into egg, followed by the breadcrumbs. 5. Deep fry chillies for 4-6 minutes until golden and chilli is tender. Remove with a slotted spoon, and drain well on paper towel. Season with salt and pepper. 6. Meanwhile, combine cucumber, tomatoes and salad leaves in a bowl. Drizzle with oil and season to taste with lemon juice, salt and pepper. 7. To serve, divide chillies among plates and serve with salad.
