Admiration of the Roux Family
Ilias sees the Roux family as gods of the fine dining world and to win this scholarship would be like winning an Oscar for him. ?It's not about the money, not about the knives? it's just one line ? Roux Scholar 2013 ? and you get into the family, the club!? he says.
He comes from a fine dining background and is very experienced, having worked under Alain Roux at the Waterside Inn for six months before becoming Senior Sous Chef at Humphry's (3 Rosettes). He says, ?Cooking is my life, it's a way of living? on my days off, I dress up and eat in Michelin star restaurants by myself?.
His family live on the Greek island of Samos and produce their own olive oil. Every two weeks, when he gets his weekend off, he flies back to see his girlfriend Irene.
The Semi Final Dish
